I love thai flavours, an at times I want the flavours, but just don't want the meat, so here's my vegetarian version of a thai curry
Ingredients
🌶 1 tsp dry roasted coriander seeds and cumin seeds
🌶 11/2 heaped tsp crushed garlic
🌶 11/2 heaped tsp crushed ginger
🌶 handful of chopped coriander
🌶 1/2 red chilli (more depending on your taste
🌶 2 spring onions
🌶 2 tsp tomatoe puree (heaped)
🌶 Coconut milk
🌶 1/2 lime (juiced)
There’s no right or wrong amount with the veg (use however much or less you want)
🌶 Mushrooms of your choice (I used a mixture of chestnut and white)
🌶 Green beans
🌶 Asparagus
🌶 Red peppers
🌶
Yellow peppers
🌶
Baby corn
Make it....
🌶 Break up the coriander seeds using pestal and mortar 🌶 Dry roast the coriander and cumin seeds, and set aside 🌶 Chop, then fry off the mushrooms and set aside 🌶 Mix the garlic, ginger, chopped chillies, coriander and spring onions together and fry off in a pan (not too high heat, else garlic will burn) 🌶 Add the tomato puree 🌶 Add all the vegetables and stir fry for a few minutes 🌶 Add the fried mushrooms 🌶 Add coconut milk and let simmer for a while until you have reached your desired crunch 🌶 Add the juice of half a lime and stir 🌶 Garnish with more chillies and coriander 🌶 Serve with coconut rice
